The Protein Transition: The science behind alternative proteins (a GFI Course)
Would you like to learn more about the impact potential and science of alternative proteins?
The Good Food Institute offers a free, self-paced, open-access online course that gives a great overall introduction, which I can recommend for anyone slightly interested in the topic - even "only" as a consumer (link in the comments).
The course describes the current status of our meat-heavy diet and the large impact potential of alternative proteins vividly, before giving the necessary explanation of what meat actually is. This includes the science behind its organoleptic properties like texture, color and flavor - and thus the requirements for copying it. Then follow the 3 deep dives about the promising production possibilities on the alternative protein spectrum:
- Plant-based meat 🪴
- Fermentation 🫧
- Cultivated meat 🥩
During the last years, I only followed the transition from the sideline while trying out many new recipes and products while just hoping for better foods to be developed and established. The only active thing was sharing some inspiration for plant-based meals on my personal Instagram account when trying them out.
As part of my current work as a freelance consultant, I'm now working to get in the driver's seat more often to find effective levers and move what I can to establish a more sustainable nutrition.
My primary approach is the consulting or freelancing itself, which I want to focus more on the food start-ups and other organizations that work on a better diet for our planet’s and our own health. In the meantime, I am also developing new ideas what could be done to accelerate the transition by developing and establishing better meals quicker.
